Lecithin is a naturally-occurring phospholipid--a compound that contains
both fatty acids and water-soluble components. Phospholipids can mix
with both fat and water. Lecithin is made in the liver and it is found in the
brain. Dietary sources of lecithin include animal foods such as beef and
eggs, as well as plant foods, particularly soybeans and wheat germ.

Lecithin is a necessary part of human cell membranes, and it is also
involved in the movement of cholesterol in the body--possibly helping to
keep cholesterol deposits from forming in blood vessels. Additionally,
it plays a role in the production of acetylcholine, which is a neurotransmitter
required for memory, other brain functions, and muscle control.
Neurotransmitters are chemicals that carry signals from nerve cells to
other cells.

In the United States, most diets contain adequate amounts of lecithin.
However, Individuals with poor diets, those with eating disorders, strict
vegetarians, and the elderly may not get enough lecithin from foods.
Supplemental lecithin or one of its components, choline, is commonly
added to multiple vitamin-mineral products and lecithin is also available
as a single-component supplement, usually made from soybeans.
Lecithin supplements can be expensive, however, so improving the diet
may be a less costly way of increasing lecithin consumption.

Commercially, lecithin is used in cosmetics, foods, and medicines to
keep the fat and water ingredients from separating. It may be used as a
carrier for injected, oral, and topical medications.

Phosphatidylcholine and Homocysteine
A report in the July 2005 issue of the American Journal of Clinical Nutrition,
indicates that a daily dose of choline, supplemented as phosphatidyl choline,
lowers fasting as well as postmethionine-loading plasma homocysteine
concentrations in healthy men with mildly elevated homocysteine concentrations.
If high homocysteine concentrations indeed cause cardiovascular disease,
choline intake may reduce cardiovascular disease risk in humans.

The mechanism may be the ability of choline to be transformed into betaine,
also known as trimethylglycine. Higher intakes of dietary choline and betaine are
related to lower homocysteine concentrations independent of other determinants, including folate and other B vitamins.

Homocysteine
When elevated in the system, the overall body is in a toxic acidic state called
inflammation. A simple $10 blood test called  CRP tests (C Reactive Protein)
gives you an accurate picture.  Inflammation will cause arteries to erode and thin
allowing for ruptures; underlying and hidden cause of heart attacks.
Lecithin is an ideal way to mitigate excessive homocysteine in the system and
